Keto/Paleo English Muffins - Assorted

There are SO MANY recipes for keto/paleo English muffins that I couldn't pick just one to highlight, so here's a list for you to conduct your own baking experiments.  Try a new recipe every day until you find "The One"!

Sugarfree Mom walks you through variations on a 7-ingredient low carb English muffin which webmaster Brenda says is grain freegluten freelow carb and can be made in under 5 minutes.

I've been using Sugarfree Mom's English muffin recipe for a while and can definitely recommend it!  It's favorited in my Recipe Keeper and is actually the muffin in my Breakfast for Dinner post.

The Big Man's World is a fun website and has a great looking muffin, even if the ingredients are somewhat unconventional - requiring peanut flour and unsweetened canned pumpkin.

Check out Arman's photos, his muffins look like the real thing.  I'm anxious to try them.

I found Wholesome Yum while browsing Suzanne Ryan's Keto Karma Pinterest page.  There was a link to WY's keto bagel recipe and I couldn't resist the detour, even though I was still researching English muffin recipes. 

I could spend all day on Wholesome Yum.  And I just might!

I'll let you know what I find.





Tips for all of the above:  Remember to adjust for your microwave's strength, i.e., 900 watts, 1000 watts, 1300 watts, etc.  Altitude is also a factor.

One thing I noticed is that all of the recipes are mixed together without adding wet and dry ingredients separately, as in traditional baking.  Does it make a difference?  Try it both ways and let me know.

A couple of the recipes give instructions for baking in the oven but you'll lose the convenience of the 60-second muffin.  Does that make a difference?  Sometimes, it surely must.

I think all of these questions are worth looking into on our quest for the perfect keto/paleo foods so that we never, never go backward.

That said, I can only give each of these recipes 3 out of 5 Mmms because, well, you know, they're not bread.  But, someday, we may come up with Better than Bread if we keep experimenting and developing these incredible science projects we call food.
