Mango + Orange + Jicama = Best Fruit Salad EVER!

Doesn't that look delicious?!  That's because it IS!  I saw this on America's Test Kitchen (Season 16, Episode 21 - Dinner in Cuba) and it's now my favorite fruit salad of all time.

I recommend watching the video so you can see how to cut the fruits properly.  

This recipe is definitely NOT Keto-friendly but it may be Paleo-friendly.  Again, check your guidelines.  

Whole30 looks okay with this one, minus the sugar.  Try it, it might be really great without the added sweetness.


Here's the recipe:

1 Jicama - diced to 1/4 inch pieces  (What the hell is a Jicama?)
2 Mangoes - diced to 1/2 inch pieces
2 Oranges - diced to 1/2 inch thick rings, then diced


To a warm saucepan, add:

3 T. lime juice
3 T. sugar
1/4 tsp. red pepper flakes
1/4 tsp. lime zest
Pinch of salt

Bring to a simmer over medium heat to infuse sugar with zest.  When sugar is dissolved and nicely bubbly, remove from heat.

Add Jicama to saucepan.  Stir, coating all of the Jicama with the sauce, and leave to cool for 20 minutes.

Add all fruit plus sauce with Jicama to a bowl and stir to combine.  Chill in refrigerator for at least 15 minutes to combine flavors.  Add more sauce, if desired.
